The drying of the whole plant preserves the bright blue color of the cornflower blossoms. After drying, the stem is removed and only the tubular petals of the cornflower blossoms remain.

  Cornflower blossoms contain anthocyanins (main component: succinyl cyanine), flavanoids and bitter substances.

  Cornflower blossoms are used in natural healing as herbal tea or in ointments. For a cornflower blossom tea, 1-2 teaspoons of cornflower petals are poured with 250ml/8.5 fl oz of hot water and allowed to steep for 10 minutes. The cornflower blossom tea has a floral-bitter taste.
