Among the types of green tea prepared by infusion, sencha is distinguished from such specific types as gyokuro in that it is shaded for a shorter time or not at all, or bancha which is the same tea but harvested later in the season.

The ideal colour of the sencha beverage is a greenish golden colour. Depending upon the temperature of the water in which it is decocted, the flavour will be different, adding to the appeal of sencha. With relatively more temperate water, it is relatively mellow; with hot water, it is more astringent. Some varieties expand when steeped to resemble leaf vegetable greens in smell, appearance, and taste.

Sencha is a steamed green tea made from small-leaf Camellia Sinensis (tea bushes), after picking, the processing of Sencha green tea starts with a quick team of the fresh tea leaves, preventing oxidization and locking in the green color and flavor, the leaves are then rolled, shaped, and dried.

After the plant grows, they are harvested in the first or second flush, with the first harvest being the best quality Sencha. This first flush is known as Sencha. Also, the leaves from the upper shoots are most often picked because they are the youngest leaves and are therefore higher quality.

The infusion has nutty and sweet notes, the flavor is very refreshing and sweetness. A bright and clean green tea with a clean mouthfeel and crisp finish.

The slender dark green leaves have a fresh, vegetal aroma and produce a delicate green-yellow cup, which is sweet and slightly earthy in taste. A distinctly soft, mild, sweet flavor and delectable grassiness, traditionally grassy flavors with a sweet, refreshing aftertaste.
