Good quality Jasmine Needle Tea - Bai Mu Dan White Peony #2 – Goodtea

White Peony, also known by the traditional name Bai Mu Dan, is a popular style of white tea made of young tea leaves and silvery unopened leaf buds. White Peony originates from Fuding in Chinese Fujian Province. But what’s even more interesting is that Fujian is the origin of all white tea, and it’s still producing some of the best and highest quality white teas.

Also known as Pai Mu Tan or Bai Mu Dan, White Peony is a sweet, mild Chinese tea made from unopened tea buds, as well as the two newest leaves to sprout. The freshly harvested leaf is allowed to wither dry in the sun. The natural oxidation that takes place during this withering gives White Peony beautiful, plush flavors. The nose is warm, floral and rich like fruit blossoms. The liquor is golden and bright. Clean, succulent floral-fruit flavor, melon sweetness, a touch of gentle savoriness and rounded mouthfeel. The least processed of all teas, white teas are named after the tiny white or silver hairs on the tea bud as it develops at the tip of the shoot. Once plucked, the buds and leaves are simply laid on to large blankets in the sun to wither and dry naturally.

Unlike Silver Needle teas, this tea is plucked later in the season and is a mixture of bud and large leaf classed as Bai Mu Dan (White Peony) although both are produced from the same plant varietal, the Da Bai.

This tea produces a light and refreshing liquor, albeit with a slightly fruitier character than you would find with a Silver Needle white tea.
